Turmeric, ginger and lemon tonic

The perfect winter tonic for when you are feeling under the weather!

Fresh turmeric can be regularly found at Huckleberrys, but if not, ground turmeric can be substituted.

Ingredients:

  • 4 cm of both fresh turmeric and fresh ginger, thinly sliced stick of cinnamon
  • 2 star anise
  • sprig of fresh bay leaves
  • teaspoon of black peppercorns
  • 1⁄4 cup fresh lemon juice
  • 2 tablespoons of honey
  • 5 litres of water

Method:

  1. Place all ingredients in saucepan on medium heat and bring to a simmer.
  2. Reduce heat to low, cover with lid and cook for 20 minutes.

Can be enjoyed hot or cold.
