Raw cauliflower and lemon tabouli

Tabouli with a twist.

Recipe taken from The Beauty Chef by Carla Oates.

Ingredients:

  • 1 x Cauliflower
  • 250g cherry tomatoes, halved
  • ½ red onion finely chopped
  • 4 handfuls of parsley, chopped
  • 2 handfuls of mint, chopped
  • 100 ml olive oil
  • 2 lemons, zested and juice
  • clove of garlic, crushed
  • Himalayan salt and pepper to taste

Method:

  1. Blitz raw cauliflower in food processor until fine grains.
  2. Combine the cauliflower, tomatoes, onion, parsley and mint in large bowl and toss.
  3.  Place the oil, lemon zest and juice and garlic in glass jar and fit with lid.
  4. Shake to combine and season with salt and pepper.
  5. Pour dressing over the cauliflower mixture.
  6. Set aside to absorb.

Serve salad on its own or with warm grilled haloumi.
