Tabouli with a twist.
Recipe taken from The Beauty Chef by Carla Oates.
Ingredients:
- 1 x Cauliflower
- 250g cherry tomatoes, halved
- ½ red onion finely chopped
- 4 handfuls of parsley, chopped
- 2 handfuls of mint, chopped
- 100 ml olive oil
- 2 lemons, zested and juice
- clove of garlic, crushed
- Himalayan salt and pepper to taste
Method:
- Blitz raw cauliflower in food processor until fine grains.
- Combine the cauliflower, tomatoes, onion, parsley and mint in large bowl and toss.
- Place the oil, lemon zest and juice and garlic in glass jar and fit with lid.
- Shake to combine and season with salt and pepper.
- Pour dressing over the cauliflower mixture.
- Set aside to absorb.
Serve salad on its own or with warm grilled haloumi.
